I am new to vending pastry. My local VSA/Vistar sells undated frozen tastykakes. Anyone have any experience with these or know the self life after the defrost. I am assuming that they don't have to be in a refrigerated machine.

Please set me straight !

No, I don't think anyone puts pastries in a refrigerated machine. I know I sure don't.

Cloverhill Bakeries puts out the "Big Texas Cinnamon Roll" and Vistar offers it undated. I get the same thing from Sam's (for a lot less money, by the way), and Sam's has a date on the box (individual wrappers are not dated) that is always about 4 to 6 weeks out.

However, I don't date them. They are a fast mover, and there has never been a need to date them.

I say try out the tastykakes and see how fast they move. If you're not getting much movement, then you might want to start dating them 6 weeks after you get them in from Vistar (or use the date Sam's gives you if you buy them there).

I agree, anything cloverhill rocks. I sell the bigtex, Hunny bun, cupcakes and all the bearclaw assortment. My best sellers are Mrs. Bairds.

I also get frozen tastykake from Vistar. Once they defrost I would give them about 3 weeks or so. I've let them go to a month a few times and never had a complaint. But tastykake is such a great seller for me that they almost always are gone within 3 weeks.

But this is only for the regular tastykake items (krimpets, juniors, etc). If you get the frozen pies those are good for no more then a week when they thaw (they get nasty really quick after that).
